The Negroni is an acquired taste, but it’s a taste worth acquiring. The characteristic, tongue-curling bitterness of the Campari is only partially answered by the vermouth, yielding a flavour profile that is pretty much unique in the cocktail universe.

1 oz. Mumbai Sapphire gin

1 oz. Martini sweet vermouth

1 oz. Campari

Stir and serve on the rocks.

Pink grapefruit – daringly – for garnish.
